Warm Quinoa + Sweet Potato Salad

Ingredients:

Salad:
2 medium sized sweet potatoes
2 cups quinoa
4 cups chopped kale
1 red onion
1/2 cup chopped green onions
3 garlic cloves
2 cups green beans
Coconut oil

Dressing:
1/2 cup hemp oil
1/2 lemon squeezed
Sea salt to taste
Pepper to taste

Steps:

Makes 2 servings.
