SPinach, Pecan and Avocado Salad
I am all about what's easy. Most of us live very busy lives and we want delicious, healthy food that is quick to put together, am I right? This is the perfect recipe for the busy individuals and takes under 10 minutes to make. It is nutrient dense, high in healthy fats, protein and is simply delicious. It is also best to make your own salad dressings as many salad dressing you buy at the grocery store contain preservatives, flavoring, hidden sugars and other artificial ingredients that we want to stay away from. It is super easy to mix up your own dressing and it only takes a minute. If you are taking this to work or school with you, I suggest buying a small container that you can put the dressing in and then mix the salad together at work to prevent the spinach from going soggy.
Ingredients
Salad:
- 2 large handfuls spinach
- 2 mini cucumbers sliced
- 1 handful of pecans
- 1/2 an avocado
- Sunflower seeds to top
Dressing:
- 1 1/2 tbsp olive oil
- 1/2 tsp oregano
- 1 tsp organic stone ground mustard
- Sea salt
- Freshly ground pepper
Steps
- Thoroughly wash spinach leaves and cucumbers
- Slice cucumbers and combine them with spinach leaves in a large serving bowl
- Add pecans to the mixture
- Slice and peel avocado and add to the side of the salad mixture
- Combine dressing mixture- olive oil, oregano, mustard, salt and pepper
- Pour dressing over the salad and mix until completely coated
- Top with sunflower seeds
- Enjoy!
