Cinnamon Pumpkin Squares

October is one of my favorite months because of all of the amazing pumpkin recipes you can experiment with. Pumpkin smoothies, pumpkin pie, pumpkin cupcakes, pumpkin lattes and the list goes on. Today, I want to share with you my yummy pumpkin square recipe that is super easy to make and that you can make under an hour (including bake time!). This recipe is also dairy free and sugar free and still tastes delicious! We know pumpkin not only is delicious tasting but there are some incredible health benefits of this tasty little treat.  Pumpkins are rich in vitamin A, which is important for eye sight, are an excellent source of fiber, needed for healthy digestion, rich in potassium and vitamin C and have free-radical-neutralizing powers due to  the carotenoid content keeping cancer cells at bay and skin wrinkle free!

Ingredients:

  • 1/2 cup almond meal flour
  • 1/2 cup brown rice flour
  • 1/2 cup almond milk (check the label to make sure it's carageenan free)
  • 1 cap organic pumpkin puree (I used Farmer's Market Foods)
  • 4 tbsp melted grassfed organic butter
  • 2 organic eggs
  • 1 + 1/2 tsp ceylon cinnamon (I used Kurundu spices)
  • 1/4 tsp clove powder (I used Kurundu spices)
  • 1 tsp aluminum free baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla
  • Couple pinches sea salt
  • Cacao nibs for topping
  • Pecans for topping

Steps:

1. Preheat over to 350°F
2. Combine all dry ingredients into a large mixing bowl and stir- almond meal flour, brown rice flour, ceylon cinnamon, clove powder, baking powder, baking soda and sea salt
3. Gradually add each wet ingredient and continue to stir- almond milk, pumpkin puree, butter, eggs and vanilla
4. Grease a baking pan with butter or coconut butter 
5. Pour batter into baking pan spread evenly

6. Top with cacao nibs and/or pecans
7. Place in oven and bake for 35-40 minutes.  Allow to cool completely and cut into desired squares. Squares remain fresh for up to  1 week in refrigerator or freeze them so they last longer!
