Chocolate Pecan Quinoa Cookies
Gluten free cookies tend to get a bad rap am I right? They are often described as dry with no flavour. Well, not these bad boys! These are not only gluten free but they are incredibly delicious. Made with quinoa which is an excellent source of complete protein (it contains all 9 essential amino acids). Also, made with quality raw cacao which is high in magnesium. And to top it off it contains more nutrients thanks to the apple sauce, banana and pecans. Low on the glycemic index, so you won't crash after eating this yummy little treat!

Steps:
- Heat stove top to high heat and bring 2 cups of boiling water to a boil
- Add 1/2 cup (uncooked) or 1 cup (cooked) quinoa to boiling water and cook for approximately 15 minutes or until soft
- Preheat oven to 350° F
- Add all ingredients (except the banana) in a mixing bowl and mix together
- Remove quinoa for stove, strain and run cold water over the quinoa to cool it down
- Mix quinoa and banana in a mixing bowl
- Combine quinoa mixture with other mixture and combine thoroughly
- Lather pan with coconut oil so cookies don't stick
- Scoop tablespoon size cookies onto cookie sheet
- Bake for 20-22 minutes
