Cheesy Spinach + Kale Salad

Shredded spinach and kale salad with a yummy cheesy cashew dressing will make you never want to eat another boring salad again.  This salad is incredibly filling too because of the healthy fats and protein.  To feel your absolute best, it is best to eat half a plate of veggies at every meal.  You can eat this salad on its own or as a side to a dish. 

So, what makes this salad so healthy?  The list is long!  So, here are a few key points.  I am completely obsessed with nutritional yeast! I cut out cheese ages ago, because of a severe intolerance and then I found this dream of an ingredient. It tastes like cheese but it is high in amino acids, and is an excellent protein source.  Excellent for people like me who don't like eating meat every day.  However, everyone can benefit from the use of nutritional yeast, even if you aren't a vegetarian or a vegan.  As for kale and spinach, these are your dark leaky greens which most people should be incorporating more of into their diet.  I like to rotate my dark leafy greens, so I'm not consuming the same type daily.  These dark leafy greens are rich in vitamins, minerals, fiber and disease fighting phytonutrients,  Particularly rich in folate, which contributes to the production of serotonin (our feel good hormones), these dark leafy greens help you feeling your best and your happiest! 

Note: If you are on blood thinners such as Coumadin be sure to have your doctor monitor your medication dosage, due to the Vitamin K content, which plays an essential role in blood clotting.  Also, if you have IBS, it may trigger symptoms.

Ingredients:

Salad:
  • 3 cups spinach, chopped
  • 3 cups kale, chopped
  • 1 cup baby tomatoes, halved
  • 4 medium sized radishes, thinly sliced

Dressing:
  • 1/2 cup nutritional yeast
  • 2 garlic cloves 
  • 1/2 cup chopped cashews
  • 1/2 cup olive oil
  • 1 tsp. onion powder
  • Sea salt
  • Pepper

Steps:

  1. Chop kale and spinach into small shreds
  2. Halve baby tomatoes and thinly slice radishes
  3. In a food processor, with metal blade, combine all of the dressing ingredients- nutritional yeast, garlic cloves, cashews, olive oil, onion powder, sea salt and pepper
  4. Process on high speed until well combined and smooth  
  5. Scrape sides of food processor and pour over spinach, kale, tomatoes and radishes
  6. Thoroughly mix so salad mixture is fully covered in the cheesy-like cashew dressing

Makes 2 servings.
