Spring has officially sprung and I have started craving lighter snacks...Happy spring! Yesterday, was officially the first day of spring and I can sense the shift in energy and the delicious warm weather that is upon us. I truly can't contain my excitement for this year's spring and summer. Last year I got married, and all around the summer was super crazy busy for myself and my hubby. We were planning a wedding, I was working a full-time job plus building my yoga and nutrition business on the side. Things were definitely nutty, so this spring and summer I am so excited to have more balance in my life, plus more time to share with all of you my delicious recipes, and healthy inspiration. I was inspired to make a healthy and light snack in the spirit of spring's arrival, so I whipped up these cutest little grilled zucchini and goat cheese slices. They were incredibly easy to make and quick to prepare. I made them in less than 10 minutes and with only 5 main ingredients. You can top your zucchini slices with any of your favourite veggies and herbs. Have fun with it and experiment with different ingredients. The possibilities are endless! I would love to hear what else you have tried topping the zucchini with!
