Avocado Basil + Cashew Zucchini Noodles
(Makes 2 Servings)

Pasta.  Who doesn't love pasta? For everyone who knows me, pasta is my absolute weakness! Since, cleaning up my diet and balancing my hormones however I have had to be creative with ways I can still satisfy those pasta cravings but with healthier options.  One of the answers is zucchini noodles! Gotta love them! I have had them hundreds of times at different organic restaurants around the city, but never have made them myself at home.  Crazy right? I bought a spirilizer about 6 months ago and my fiance would poke fun because this wicked spirilizer I bought that I was SO excited about sat in our spare room closet that entire time, in the packaging untouched.  I could blame it on busyness, or I didn't know how to work it.  But, really I have no excuses.  I have to say though I am so glad I whipped it out last evening because it is TRULY my new favorite toy.  You will be seeing many more fun recipes from me using this new (not so "new") gadget of mine over the next little while.

Enjoy my first of many more spirilizer recipes! It was insanely delicious!

Prep Time: 20 minutes
Servings: 2


Ingredients- Noodles:

  • 2 medium sized zucchinis
  • salsa
  • pine nuts

Ingredients- Dressing:

  • 1 avocado
  • 1/4 sliced lemon, juiced
  • 1/2 cup cashews
  • 1 handful fresh basil leaves
  • 1 tbsp olive oil
  • 1 clove garlic
  • sea salt

Steps:

  1. Use a spirilizer or julienne peeler and peel 2 full zucchinis
  2. Place peeled zucchinis into a large mixing bowl
  3. Have salsa (I bought mine fresh from whole foods but you can easily make your own too, try this recipe here) and pine nuts on the side

Steps:

  1. In a food processor or blender place peeled avocado, juiced lemon, cashews, basil leaves, olive oil, garlic and sea salt and blend on medium-high speed until fully smooth and creamy
  2. Scoop creamy dressing from blender onto the zucchini noodles and mix until fully covered
  3. Top with salsa and pine nuts
