Avocado, Cucumber + celery soup
Have you ever tried cold soup? It is actually quite refreshing. I love soup and eat soup quite often because it's easy and you can whip up a batch that will last you a couple of days. In winter we obviously crave more warming foods and tend to eat a lot of hot soups. But, what about when the hot months roll around? We tend to turn to smoothies, juices and salads. Well, why not try a cold soup instead. This avocado, cucumber and celery soup is loaded with "good stuff". Where shall I start. Rich in essential fatty acids, vitamins, minerals and antioxidants, this soup will give you energy, focus and mental alertness to help sustain you throughout the day. It also has a secret ingredient called kefir. Kefir is a natural probiotic food source. You know those probiotic supplements everyone is talking about, or that your nutritionist or naturopath has you on? Well, yes we can get them from foods too! Ingredients:
- 1 avocado, peeled + pitted
- 10 slices of cucumber
- 2 celery sticks
- 1/2 lemon squeezed
- 1/2 lime squeezed
- 1/4 cup unsweetened kefir
- 1/2 cup filtered water
- Ice (4 cubes)
- Coriander (for garnish)- optional
Steps:
- Combine avocado, cucumber, celery, lemon, lime, kefir and water into a food processor
- Process on high in food processor until creamy
- Add ice to achieve desired thickness and coldness, I used 4 ice cubes
- Garnish with coriander
